Vegetable Omelet

Servings: 1

Ingredients:

  • 2 eggs
  • 2 tbsp Water
  • 1 tbsp unsalted butter
  • ½ cup filling (seafood, meat, vegetables low in potassium/phosphorus)

Directions:

  1. Combine eggs and water
  2. Heat butter in a pan, then pour in egg mixture
  3. Carefully tilt the pan when necessary a few times to let the combination set evenly
  4. Fill the omelet with the filling of your choice (put the filling on the left or right side)
  5. Fold the omelet in half
  6. Serve
