LOBSTER BRISKET

INGREDIENTS

  • 2 Tablespoons of olive oil
  • 2 Tablespoons of butter
  • 1 Diced medium yellow onion
  • 2 Diced Celery ribs
  • 1 Peeled and diced peeled carrot peeled
  • 2 Tablespoons of tomato paste
  • 3 Minced garlic cloves
  • ½ teaspoon of salt
  • 1/8 teaspoon of white pepper
  • 1/8 teaspoon of cayenne
  • 3 Tablespoons of flour
  • ½ cup of dry white wine
  • 1 Tablespoon of Worcestershire sauce
  • 1 Stock of about 32 ounces of boxfish stock
  • 1 to 2 Bay leaves
  • 4 sprigs of fresh thyme
  • ½ cup of heavy cream
  • ½ pound of cooked lobster meat
  • Lemon zest

DIRECTIONS

  1. Add the olive oil and the butter to your Dutch oven over the stovetop over a medium-high heat
  2. Let the butter melt then add the onion, the celery and the carrot
  3. Stir your ingredients and cook for about 9 minutes
  4. Add the tomato paste, the minced garlic, and the seasonings then stir and cook for about 1 minute.
  5. Add in the flour and stir very well then soak up any quantity of liquid in your Dutch oven
  6. Slowly add in the white wine and whisk very well
  7. Add in the Worcestershire sauce.
  8. Add in the fish stock about ½ cup at a time then stir to maintain your base thick
  9. Add in the bay leaf and the thyme leaves then let simmer for about 25 minutes and stir from time to time
  10. Stir in chopped lobster meat and the heavy cream then sprinkle with the lemon zest, more fresh thyme, and the lobster meat for serving
  11. Serve and enjoy your dish!
