Fast Burritos

Ingredients:

  • 1 ½ tsp Olive oil
  • ½ Red bell pepper (diced)
  • 4 Scallions (sliced)
  • 8 Eggs (beaten)
  • 4 Corn tortillas

Directions:

  1. Heat oil over medium heat, then adds bell pepper and green onion. Cook for 3 minutes.
  2. Add eggs to the vegetables and cook for 5 minutes or until eggs are done
  3. Microwave tortillas for 2 minutes
  4. Add egg mixture into warm tortillas, roll them up and eat
