Egg Muffins

Ingredients:

  • 1 cup bell peppers
  • 1 cup onion
  • ½ lb./0.2 kg ground pork or beef
  • ¼ tsp poultry seasoning
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ½ tsp herb seasoning blend
  • 8 eggs
  • 2 tbsp milk substitute
  • ¼ tsp salt (optional)

Directions:

  1. Warm the oven to 350°F (176°C) and use a cooking spray to grease a muffin tin
  2. Dice onion and bell peppers
  3. Combine meat, poultry seasoning, garlic and onion powders, and seasoning in a bowl to create a sausage
  4. Cook sausage crumbles in a skillet for 12 minutes until they are done
  5. Mix eggs and milk substitute and combine with sausage crumbles and veggies
  6. Pour the mixture into the muffin tin and bake for 18 to 22 minutes
