DUTCH OVEN BEEF WITH MUSHROOMS

PREP TIME: 8 MINUTES|COOK TIME: 1 ½ HOURS| SERVINGS: 4-5

INGREDIENTS

  • 3 tablespoons olive oil, divided
  • 2 cups sliced fresh assorted mushrooms
  • 4 cloves garlic, smashed
  • 1 (3- to 4-pound) chuck roast
  • 1½ tablespoons kosher salt
  • 1½ teaspoons ground black pepper
  • 1 cup low-sodium beef broth
  • ½ cup dry red wine
  • ¼ cup dried porcini mushrooms
  • 2 tablespoons tomato paste
  • 10 sprigs of fresh oregano
  • Garnish: fresh oregano sprigs

DIRECTIONS

  1. Preheat your oven to a temperature of about 275°.
  2. Heat about 2 tablespoons of oil over medium-high heat then add in the mushrooms and the garlic and cook while stirring for about 3 to 4 minutes
  3. Remove from the pot then add in the remaining 1 tablespoon of oil to the Dutch oven
  4. Sprinkle all the sides of the roast with the salt and the pepper then add the roast sear and turn from time to time for about 3 minutes per side then remove from the Dutch oven
  5. Add in the broth, the wine, the porcini mushrooms, and the tomato paste then scrape the bottom of the pot and bring to a boil
  6. Remove from the heat then add the roast and place the oregano with the reserved mushroom on top of the roast and cover with a lid
  7. Bake for about 1 hour then let stand for about 5 minutes
  8. Serve and enjoy your dish!
