Corn Idlis

Servings: 4

Ingredients:

  • 2 tbsp vegetable oil
  • 1tsp mustard seeds
  • ¼ cup semolina
  • 2 green chilies (chopped)
  • 1/8 tsp salt
  • ¼ cup yogurt
  • ¼ cup of water
  • ¼ cup corn (grated)
  • ¼ cup paneer cheese
  • 1 tbsp cilantro (chopped)
  • 1 tbsp coriander (chopped)
  • 1 tbsp ghee

Directions:

  1. Warm vegetable oil in a saucepan and add mustard seeds
  2. When seeds splutter, proceeds to add semolina, salt, and chilies, and roast them until semolina turns brownish
  3. Remove pan from the stove
  4. Combine yogurt and water and add together with corn, cheese, and cilantro to semolina mixture, stir thoroughly and let sit for 10 minutes
  5. Use ghee to grease idli mold and add small portions of the batter
  6. Steam and cook idli for 10 minutes sprinkle with cilantro and coriander
