INGREDIENTS

  • 4 cups of red or kidney beans
  • 1 tablespoon of salt
  • 2 Finely diced green plantains
  • 1 Small grated or shredded carrot
  • 1 Pork trotter
  • 2 tablespoons of oil
  • 2 tablespoons of tomato paste

DIRECTIONS

  1. Start by rinsing the beans before cooking it then place it into a large Dutch oven that is half filled with water and about 1 tablespoon of salt
  2. Cook the beans for about 30 minutes
  3. Add in the rest of the ingredients and cook for about 20 additional minutes
  4. Serve and enjoy your dish with cooked rice!
